Happy Thanksgiving Blog World! I hope everyone had an amazing day filled with food, family and friends.
I wanted to share a recipe that has become a staple in our home for Thanksgiving night or for lunch the next day. My girls are great eaters, willing to try anything at least once. They love all of the standard Thanksgiving foods (turkey, stuffing, mashed potatos), however if they are on the same table as lefse, and all kinds of pie, they will choose the later for their meal.
This is a great recipe to help use up those leftovers, and is the “Thanksgiving Meal” my girls ask for. So Enjoy! Have a safe and happy holiday season!
2 cups mashed potatos
1 cup stuffing
1/2 cup cubed or shredded turkey
1tbsp. extra virgin olive oil
Mix potatoes, stuffing and turkey together. Heat olive oil in a skillet or grill pan. Make 4 patties from the mixture. Fry on med. heat for 3 min. each side. Top with gravy.
